Eggless,dairy free,low sugar,simple,quick,and super delicious! Muffins are a favorite of mine and when everyone wants a different flavor…let them build their own!

Use gluten free flour in place of all purpose and spelt!

Ingredients

Makes: 12 muffins

Plain muffin batter:

1 cup oatmeal.

1 cup spelt or all purpose flour.

2 cups all purpose flour.

5 tsp baking powder.

1/4 tsp sea salt.

1 cup organic sugar.

2 cups dairy free milk.

2/3 cup olive oil.

2 tsp vanilla extract.

Flavorings: per 1 muffin

Apple cinnamon: apple pieces and cinnamon as needed. Top with apple pieces.

Peach oatmeal: peach pieces and cinnamon as needed. Top with oatmeal.

Cinnamon raisin: cinnamon and raisins as needed. Top with raisins.

Tart cherry: dried tart cherries and cinnamon as needed. Top with dried tart cherries.

Cherry almond: dried tart cherries and almond extract as needed.

Double chocolate: cocoa powder and dark chocolate chips as needed. Top with chocolate chips.

Coconut: coconut flakes as needed. Top with coconut flakes.

Lemon: lemon juice and lemon zest. Top with a lemon slice.

Lime: lime juice and zest as needed. Top with a lime slice.

Blueberry: fresh/frozen blueberries and lemon juice as needed. Top with blueberries.

DIRECTIONS

Choose your flavor for each muffin hole and pour into the muffin holes. Bake at 350°f for 30 to 40 mins until golden brown.
