Lemon muffins made without butter,dairy,or eggs! Delicous lemon muffins are sure to bring a smile to your face!

Make it gluten free

Use gluten free flour in place of spelt and all purpose flour and use gluten free oats.


You can use buttermilk instead of dairy free or make dairy free buttermilk with dairy free milk and lemon juice!

Switch the citrus

If you dont have lemons or you just want a different flavor…you can use lime,orange,grapefruit,or any other citrus you want!

Makes: 12

1 cup oats.

1 cup spelt flour.

2 cups all purpose flour.

5 tsp baking powder.

Pinch of sea salt.

3/4 to 1 cup of sugar (organic if at hand).

2 cups dairy free milk.

2/3 cup of extra virgin olive oil (E.V.O.O).

1 tsp vanilla.

juice and zest of 1 lemon.

Before baking.
After baking.


Mix all the ingredients (except the lemon zest) together in a large bowl.

Divide evenly between 12 lined muffins holes.

Top with the lemon zest before baking.

Bake at 350°f for 30 to 40 mins.
