Healthy lentil salad

This is a very simple salad to make that requires no oven or stove top whatsoever.

Serves: 3-4

Ingredients:

  • 1 can lentils, drained, rinsed.
  • 1 tomato, diced.
  • 1 carrot, diced.
  • 1/2 a small onion, diced.
  • 1/4 cup chopped dill.
  • 1/4 cup chopped parsley.
  • 2 small pickles, diced.
  • Sea salt to taste.
  • 2 tbsp olive oil.
  • 2 tbsp pickle juice.
  • 1 tbsp Dijon mustard.

Directions:

Simply toss together in a large bowl and enjoy!
