
This is a very simple salad to make that requires no oven or stove top whatsoever.
Serves: 3-4
Ingredients:
- 1 can lentils, drained, rinsed.
- 1 tomato, diced.
- 1 carrot, diced.
- 1/2 a small onion, diced.
- 1/4 cup chopped dill.
- 1/4 cup chopped parsley.
- 2 small pickles, diced.
- Sea salt to taste.
- 2 tbsp olive oil.
- 2 tbsp pickle juice.
- 1 tbsp Dijon mustard.
Directions:
Simply toss together in a large bowl and enjoy!
