Vegan salsa verde

Vegan salsa verde with tortilla chips

Unlike common salsa verde his recipe uses sweet peppers and avocado for a smoother more delicious flavor!

Switch ups

Use jalapeno instead of sweet peppers.

Leave out the avocado and use more tomotillos.

Add ins

red pepper flakes.

Extra cilantro.

add some spicy peppers for more heat!

coriander.

Vegan salsa verde

Ingredients

Category: mexican

Makes: about 2 cups

4 plump ripe tomotillos.

1/2 cup white or yellow onion diced.

Cilantro as needed stem and all.

1 garlic clove.

Sea salt and black pepper to taste.

2 pinches or sugar.

Juice of 1 lime or lemon.

1 small sweet pepper.

1 pinch of ground cumin.

1 1/2 ripe avocados peeled and seeded.

DIRECTIONS

Roast the tomotillos in an oven on broil until slightly blackened on top.

Pulse through a food processor until slightly clumpy.

Top with cilantro flowers if desired. Serve with tortilla chips and/or carrot strips.
