I love simple little fresh lettuce cups and these cups have a wonderful refreshing flavor thanks to the grapefruit and cucumber. I’ve added a slightly spicy chili dressing to drizzle over these lettuce cups and it’s really simple, but if your not a fan of chili powder then you dont have to use this dressing. Not only is this recipe delicous, but also vegan and gluten free!

If lettuce cups are not your thing and it takes to much time…then you can make it a normal tossed salad.
Nut free option
Leave out the crushed pistachios. Sesame seeds are also in this recipe and can also be left out.
You can change out the grapefruit ingredients for orange ingredients which will add a sweeter, more citrus flavor.
if you dont have bib lettuce then romaine or ice berg lettuce work fine.
These are some ingredients that you can add in if you like, but they are all optional.
Tofu, or chicken.
Makes: 3 lettuce cups
3 bib lettuce cups.
1/2 an avocado, chopped.
fill the lettuce cups with the ingredients.
Juice of 1/2 a grapefruit.
Chili powder to taste.
Pinch of sesame seeds.
Stir together until well combined. Drizzle over the lettuce cups.
