Apricots,oat flour, sugar,cinnamon,and almond extract.

these delicous apricot bars are sure to brighten any occasion or if you just need something to snack on! However you eat them they are a sure crowd pleaser!

Serves: makes 12 bars

Apricot filling

Apricot filling

3 cups apricots chopped.

1 tbsp white rice flour.

1 tsp cinnamon.

Pinch of sea salt.

1/2 cup cane sugar.

1 tsp almond extract.


Mix all the ingredients together until well coated.

Vegan apricot bar

The crumble crust

2 cups white rice flour.

1 1/2 cups oat flour or oats (gluten free).

1/2 cup brown sugar.

1 cup coconut oil (or melted butter ,but it wont be dairy free).


Mix all the ingredients together in an electric mixer until well combined.

In a baking pan place parchment paper down. Take some of the crust dough and place evenly on the parchment paper.

pour the apricot filling on top and even it out.

Sprinkle on the remaining crust dough.

Bake at 400°f for 30-40 mins until golden brown.
