Make it gluten free

Use gluten free flour in place of spelt and all purpose flour and use gluten free oats.

Buttermilk

You can use buttermilk instead of dairy free or make dairy free buttermilk with dairy free milk and lemon juice!

Switch the citrus

If you dont have lemons or you just want a different flavor…you can use lime,orange,grapefruit,or any other citrus you want!

Ingredients

Makes: 12

1 cup oats.

1 cup spelt flour.

2 cups all purpose flour.

5 tsp baking powder.

Pinch of sea salt.

3/4 to 1 cup of sugar (organic if at hand).

2 cups dairy free milk.

2/3 cup of extra virgin olive oil (E.V.O.O).

1 tsp vanilla.

juice and zest of 1 lemon.

Before baking.
After baking.

DIRECTIONS

Mix all the ingredients (except the lemon zest) together in a large bowl.

Divide evenly between 12 lined muffins holes.

Top with the lemon zest before baking.

Bake at 350°f for 30 to 40 mins.

Lemon cream pie made without eggs. Lemon juice,lemon zest,coconut cream,and spelt flour crust. Topped with florida snow flowers.

This is the first lemon cream pie I’ve ever made and it was delicious! Lemony,sweet,tangy,and so so good!

Make the crust gluten free

Use gluten free flour in place of spelt flour in the crust.

Make the crust dairy free

Use coconut oil instead of butter.

lemon cream pie

Ingredients

Serves: 8-10

Filling

1 cup of cane sugar (preferably organic).

1/2 cup white rice flour.

1 1/2 tsp flavorless gelatin.

Pinch of sea salt.

1/2 cup coconut cream.

1 3/4 cup water.

Juice of 1 orange.

4-5 lemons,zested and juiced.

Pinch of turmeric.

DIRECTIONS

Mix the lemon and orange juice together.

Put the gelatin in 1/4 cup of the lemon and orange juice. Let sit for 5-10 mins.

Simmer in a pot the sugar,water,coconut cream,sea salt,lemon zest,and turmeric.

Add the remaining lemon and orange juice and white rice flour.

Simmer until thick.

Add the gelatin mixture and stir while simmering for 4-5 mins.

The crust

1 1/4 cup spelt flour.

2-3 tbsp sugar.

Pinch of sea salt.

1/3 cup butter softened or coconut oil.

4-5 tbsp water if needed.

DIRECTIONS

Mix alk the crust ingredients in an electric mixer. Put into a greased pie dish and pre bake at 350°f for 30-40 mins.

The pie

Pour the lemon curd mixture into the already baked crust.

Refrigerate for 2-3 hours.

Enjoy topped with florida snow flowers if desired (they are edible).

Homemade salsa

Easy blended salsa restaurant style! Delicous served on taco salad or with tortilla chips!

I like fresh salsa made at home and i had all the ingredients to make salsa so on cinco de mayo we ate taco salad with all the sides! Salsa,guacamole,black beans, and much more.

I did use a can of diced tomatoes with chilies,but you could use fresh tomatoes and chilies.

Make it sweeter

If you want a tangy sweet salsa I’d add in some pineapple or mango.

Make it spicy

Add in some diced jalapenos and a little more red pepper. Cayenne pepper can be used too,but it’s very spicy.

Makes: 2-3 cups

1 can of diced tomatoes with chilies.

1/3 cup diced white onion.

1 garlic clove minced.

Cilantro.

Juice of 1/2 a lemon.

1 tbsp extra virgin olive oil (E.V.O.O).

Sea salt and black pepper to taste.

Pinch of ground red pepper.

Ground Cumin to taste.

DIRECTIONS

Put all the ingredients in a food processor. Blend until slightly chunky.

Serve in a bowl with tortilla chips if desired.

1 cup or less of pecans crushed.

1 cup all purpose flour.

1/4 cup spelt flour.

Pinch of sea salt.

1/3 cup butter (or dairy free butter).

2-3 tbsp sugar.

4-5 tbsp water if needed.

DIRECTIONS

Mix all the ingredients together in an electric mixer until well combined. Put into a greased pie dish.

1/4 cup cane sugar.

Juice of 1/2 a lemon.

1/4-1/2 tsp cinnamon.

2 tbsp almond milk.

DIRECTIONS

Mix all the ingredients together until well coated. Pour onti the pie crust in the pie dish.

1/2 cup white rice flour.

1/3 cup coconut oil (or butter).

1/4 tsp cinnamon.

1 tbsp sugar.

DIRECTIONS

Mix all the ingredients together until well combined. Then sprinkle on top of the pie.

Bake the pie at 350°f for 30 to 40 mins until browned.

Crepes are hard to make and I would not try making them any bigger then these because it’s quite hard! Making crepes mini means less time and more ways to serve it!

Cook at medium high on a stovetop until slightly darker in color on each side.

Yogurt is my fav food! Plain greek yogurt with honey,walnuts,coconut flakes,and chia seeds! Even if you cant have dairy there’s a way you can make this!

Make it dairy free

Use dairy free yogurt such as…

Coconut milk yogurt.

Oat milk yogurt.

Almond milk yogurt.

You cant go wrong with yogurt!

Make it gluten free

I dont know if wheat germ even qualifies as gluten,but gluten is in the wheat protein not the starch. To be sure its gluten free leave out the wheat germ.

No sugar!

I used no sugar in this parfait! Besides the honey and natural sugar from the fruit, it’s got no added sugar!

Make it nut free

I used walnuts in this parfait,but it’s not necessary so just leave it out if you cant have nuts.

Switch it up!

Change from…

Walnuts to… pecans,cashews,or nut butter.

Blueberries to… any fruit you want!

Bluberries,almondmilk,coconut flakes,chia seeds,and a squeeze of lime juice! I love healthy smoothies and when there’s no added sugar you have no worries!

I make all my smoothies fresh without a recipe and I just throw in whatever I have,blend it ,and enjoy! You dont have to follow this recipe exactly dont feel like you have to use exactly the same kind of almond milk or coconut milk.

Wheat germ

If you dont have wheat germ (or you have no idea what it is) then just leave it out or use nut butter in its place for a little kick of nutty flavor!

Chia seeds

Packed with tons of benefits chia seeds are great for smoothies or muffins. I use chia seeds in my yogurt or o make chia pudding!

If you dont have limes

Use lemon juice or no citrus juice at all! Although the lime or lemon juice helps give a sweeter flavor.

Make it gluten free or vegan

Leave out the wheat germ or use nut butter instead.

Make it dairy free

Use dairy free yogurt. I recommend using almond or coconut milk yogurt.
