A refreshing smoothie perfect for summer or any time you feel a craving for a smoothie.
basil is such a wonderful herb that can be used in both sweet or savory foods.
when I’m in a hurry for breakfast (or just feel in the mood for a smoothie) I like to throw some ingredients in the blender then pour into a cup and boom there you have it! A smoothie!

The three simple Steps to smoothie making

first throw all your ingredients into your blender (make sure the lid is on).

blend until smoothie.
pour into a cup, garnish, and enjoy!

Basil

basil is a very fragrant herb with a wonderful flavor. I like to put basil on my spaghetti and sometimes I just like to nibble at a leaf of basil.
Blueberries

I used wild blueberries because they have the best flavor and actually have 2x the antioxidants of normal blueberries!

Oats

I always use gluten free oats but if you don’t have gluten free oats normal oats will work fine.

Classic salad

Everyone wants a little classic meal that doesn’t have all those new ingredients. When your tired and need a late dinner all you want is a good classic meal.
mid your like me and you like snacking but don’t want to eat bad snacks…then salad is your go to snack. even in cold weather a salad never fails!

my mom makes a delicious dressing that I’d call an Italian dressing. She makes it all the time and it’s always a favorite!

Vegan option (V)

I know some of you are vegans out there and I try to have an option just for you on all my recipes. I’m not a full blown vegan but I try to be. For this vegan option you can substitute Parmesan cheese for vegan Parmesan cheese or leave it out completely.
Gluten free option (GF)

use gluten free croutons, and check to make sure the rice vinegar is gluten free.

The salad: classic Italian

chopped romaine lettuce.
celery, chopped.
cherry tomatoes, sliced.
garlic herb croutons (gluten free if desired).
shredded Asiago or Parmesan cheese (vegan if desired).

Directions

toss the salad. Make the dressing below.

Extra virgin olive oil.
rice vinegar.
garlic powder.
sea salt.
Italian herbs.
Onion powder.
Directions

put all the ingredients into a jar with a lid. Give the jar (with a lid) a good shake. Shake well before each use. Enjoy over a salad!

Toast is a quick breakfast that never fails but sometimes I need a little protein and fiber with my toast. Bananas have always been a favorite of mine which is why I always have some on hand.
this banana toast has protein, Potassium, fiber, And great flavor.

Why the breads shape?

sorry about how the bread is not perfectly square this is do you the fact that it’s homemade bread and not store bought. Homemade bread does not have to be used as it can take some time. Store bought will work perfectly fine but I recommend using organic bread or bread made in Canada.
Bread types

my favorite bread types for toast are…

Sourdough. It has a wonderful flavor and if it’s real sourdough people with gluten problems can enjoy it!
Healthy seed breads. I love seed breads and they have protein and fiber already in the bread!

Artisan. Artisan bread is just as good as sourdough and it’s delicious with many other toppings as well.

toast the bread then spread with the nut or sunflower seed butter. Top with the banana slices and sprinkle with the oats, pepitas, and chia seeds. Enjoy!

A refreshing summery salad with nectarines, fresh basil, and cherry tomatoes bursting with flavor. I hope this salad makes you feel summer with every bite!

I used Parmesan cheese and some purple onion For a little zing. The fresh basil was perfect with the nectarine and went well with the tomatoes.
Nectarines

I used fresh perfectly ripe nectarines for my salad. Use organic nectarines for even better flavor!

Basil

use the freshest basil you can get and make sure it’s organic if you can. Big leaves of basil mean big flavor!

Parmesan cheese

buying Parmesan cheese made with sheep and/or goats cheese taste best and buying it from Italy tastes even better! You local grocery should have cheese from Italy.
Vegan option

use vegan Parmesan cheese and sour cream. Vegan yogurt will work in place of sour cream as well.

2-3 large spoonfuls of sour cream.
orange juice to taste.
Onion powder to taste.
garlic powder to taste.

Stir until well combined and slightly fluffy.

Oat milk smoothie

A smoothie is always great for a summer morning breakfast or An evening snack. Smoothie are packed with fiber and have protein so you can start or end your day right.

add in some extra protein or extra flavor to your smoothie…

Nut butter. But butter has lots of protein, but if your not a nut person you can use sunflower seed butter which is a personal favorite of mine.
Protein powder. Protein powder is a great way to add protein to your smoothies, but I would recommend buying natural, soy free protein powder.
Fruit. I used frozen wild blueberries in my smoothie, but you could add any fruit you want.
Milk. It doesn’t have to be Oat milk. You could use any milk you want to use, but I recommend dairy free milk it tastes best in smoothies.

This smoothie only uses 4 ingredients! I hope you enjoy these four ingredients of deliciousness!!

Cherry tomato rotini

Fresh cherry tomatoes bursting with flavor, sliced, and put atop rotini then tossed with olive oil and herbs.
I love a good pasta dish and what goes better with pasta then tomatoes?! Fresh cherry tomatoes are best when in season and buying them inorganic makes them even better.
Other option

if you for some reason can’t get any cherry tomatoes, then any other type of red or orange tomatoes, diced, or sliced will work.

This rotini dish is very simple and uses only five ingredients: cherry tomatoes, cooked rotini, olive oil, herbs, and salt.

cooked rotini noodles.
italian herbs.

directions

put desired amount of rotini noodles in a serving bowl. Slice the cherry tomatoes and add them to the rotini. Drizzle with the olive oil and sprinkle with sea salt and herbs. Add black pepper if desired. Toss and enjoy with burrata bread if desired.

I love bright green salads and dishes so pea salad is a favorite of mine!

Fresh

use fresh basil and mint in your salad, but I used frozen peas.
I also used fresh cherry tomatoes that were at its best just bursting with flavor!

Vegan Applesauce banana bread

Banana bread

I love banana bread! Its so healthy and can have so many combinations for example: chocolate banana bread, coconut banana bread, and more! The list goes on and on!

for my banana bread I used walnuts and made it vegan. It doesn’t have to be vegan you could use butter if you wanted, but I made it vegan.

Add ins

Banana bread has unlimited add ins and here is a list of just a few…

chocolate chips.
walnuts.
Any nuts.
coconut flakes.
dried fruit.
cocoa nibs or powder.
so much more!

Flour

when making banana bread or anything you bake, make sure your using organic or spelt flour. Organic and spelt flour is more easy to digest and is better for you.

Let it cool

I love the smell of fresh banana bread that has just been taken out of the oven, but resist he temptation to eat it right when it’s done. Let it cool completely so you can enjoy it without burning your mouth.

Non-vegan option

if you like the flavor of butter or don’t like vegan banana bread then you can use butter in place of coconut oil.

Makes: one loaf
1 1/2 cups of spelt or all purpose flour.
1tsp baking soda.
pinch of sea salt.
1/2 cup of sugar.
3 large ripe bananas, mashed.
1/2 cup of applesauce.
4 tbsp coconut oil.
1/8 tsp of vanilla.
walnuts (optional).
directions
preheat the oven to 350•f.

mix the banana with the sugar and vanilla. Add in the rest of the ingredients one ingredient at a time.
grease a bread dish with coconut oil.
Pour in the batter.
bake at 350•f for 50-60 mins until knife inserted comes out clean.
Let cool then devour.

Dandelion shave many health benefits and dandelions are one of the most common wild flowers. Its said that dandelion helps with aging and acne, but make sure you don’t have an allergy to dandelion.
How to find dandelions

you can find dandelions in your backyard! You can identify dandelions by their yellow flowers and long scalloped leaves.

Before you make the tea

before you just throw the dandelions into your mug you might want to wash of your dandelions. Bugs or lol critters could be hiding in your dandelions so just give them a good rinse before using.

you only need three ingredients to make your sun tea… honey, dandelions, and water!

Fresh dandelions.
honey to taste if desired.
Clean water for drinking.
Directions

fill a mug with the water. Add the cleaned dandelions. Let sit in a sunny spot for a few hours. Add the honey if desired and take out the dandelion flowers and leaves. Enjoy!

Sesame lime dressing with strawberry salad

A refreshing strawberry salad with one of my favorite dressings! Sesame lime dressing is by far one of the best dressings I’ve made and I hope you think so too!

the lime juice pairs so well with sesame seeds and olive oil. Just whisk or stir until well combined and taste it (I always like to taste my dressing before I put it on a salad).

Strawberries

before buying some random strawberries at the store just because they look the best, keep in mind that organic or wild strawberries are the best even if they are smaller. Your body will thank you for it!

Lettuce

lettuce should also be bought in organic. Anything else used in this salad should be organic or wild if you have it at hand.
