Juice of 1/2 a lime.

Apricot filling

3 cups apricots chopped.

1 tbsp white rice flour.

1 tsp cinnamon.

Pinch of sea salt.

1/2 cup cane sugar.

1 tsp almond extract.

DIRECTIONS

Mix all the ingredients together until well coated.

2 cups white rice flour.

1 1/2 cups oat flour or oats (gluten free).

1/2 cup brown sugar.

1 cup coconut oil (or melted butter ,but it wont be dairy free).

DIRECTIONS

Mix all the ingredients together in an electric mixer until well combined.

In a baking pan place parchment paper down. Take some of the crust dough and place evenly on the parchment paper.

pour the apricot filling on top and even it out.

Sprinkle on the remaining crust dough.

Bake at 400°f for 30-40 mins until golden brown.

Chayote squash is a Mexican vegetable that looks like a granny smith apple,but tastes like a bland cucumber/apple.

Chayote can be found at most mexican markets,but I found this at my local grocery.

I love dragon fruit! It may be a strange kind of fruit,but its packed with health benefits and delicous flavor!

I’m kind of obsessed with nut butter! Particularly sunflower butter at the moment,but I do so want to try tiger nut butter! Other great nut butters are… almond,peanut,cashew,hazelnut,and just about any nut turned into smooth creamy butter!

This Chinese based dressing or dip is so good and sure to be good on whatever salad you make!

Rice vinegar

If you dont have rice vinegar you can use white vinegar,but rice vinegar has a particular flavor that makes this dressing delicous.

Coconut aminos

Coconut aminos are like soy sauce only they are lower in sodium and is actually coconut palm tree sap and it’s just as delicious as soy sauce! If you cant get coconut aminos just use soy sauce.

Lemon grass

A lemon scented grass normally used in chinese and Japanese dishes,but if you dont have it you can leave it out.

3 tbsp coconut aminos or soy sauce.

Scallion or green onion sliced.

Roasted Parsnip soup

The sweet nutty flavor of parsnips blended with garlic,olive oil,applesauce,artichoke hearts,and the secret ingredient…buttermilk!

Although this may take a little time it’s worth it when you taste this delicious roasted parsnip soup!

Make it dairy free

Leave out the buttermilk but do make a dairy free butter milk or it will not taste at all as good!

Roasted parsnips

For the roasted parsnips

Garlic powder to taste.

5 parsnips,washed and sliced lengthwise.

Extra virgin olive oil as needed.

Sage.

Thyme.

Parsley.

Basil.

Rosemary.

Leek,sliced.

Sea salt and black pepper to taste.

DIRECTIONS

Grease a baking sheet and arrange the parsnips. Drizzle with the olive oil and garlic powder.

Randomly place the herbs atop the parsnips.

Roast in an oven on broil or high until roasted color appears.

Sprinkle with sea salt and black pepper.

For the soup broth

1 artichoke

2 smashed garlic cloves.

Lemon juice.

2 bay leaves.water to fill a pot.

DIRECTIONS

Steam with all the ingredients until the artichoke is tender.

Reserve the broth.

1 1/2 cups applesauce.

4 cups of the reserved artichoke broth.

Sea salt and black pepper to taste.

1 garlic clove if needed.

2 canned artichoke hearts.

1 cup butter milk.

1 handful of sliced onion.

Juice of one lemon.

1 tbsp extra virgin olive oil.

DIRECTIONS

in a blender blend the parsnips,broth,garlic,onion,artichoke hearts,and sea salt.

When blended then pour into a pot on the stove a medium high heat.

Add the buttermilk,black pepper,and olive oil. Stir until well combined.

To serve

Drizzle with buttermilk,and olive oil.

Sprinkle with sea salt and black pepper.

Top with parsley,thyme, and sliced leek.

Enjoy!

Red thai Curry paste,fresh grated ginger,fresh coconut milk,thyme,and a hint of coconut aminos (or soy sauce).

I love thai food! Its healthy,a little spicy,and delicious! I got some red thai Curry paste for a different recipe ,but since you only use a little bit I had a lot left over. Dressing was the first thing that came into my mind! So enjoy this slightly spicy dressing!
