When you make this fragrant granola your while kitchen will smell like vanilla and toasted oats! Simple ingredients in their raw forms, toasted into a wonderful, nutty granola!

Simpler version

For a extremely simple version of this granola use only vanilla extract, oats,and cinnamon!

Serves: 1-2

1/2 cup gluten free oats.

1/2 tbsp chia seeds.

Honey to taste.

Crushed pecans as desired.

Vanilla extract to taste.

1-2 tbsp almond or nut butter.

Cinnamon to taste.

Pinch of ground ginger.

Pinch of nutmeg.

Extra virgin olive oil for the pan.

Pinch of sea salt.

DIRECTIONS

At medium high in a pot, toast all the ingredients until fragrant or toasted as desired.

Serve over yogurt if desired.

So good you’ll eat it by the spoonful as vanilla bean yogurt and why not when there’s oy 3 simple ingredients!

I got a vanilla bean for the first time and didn’t know what to do with it. Well when I was making a simple honey and yogurt fruit dip I remembered my vanilla bean! So I split it open and took some of the fragrant beans out (which smell amazing!)

Other ways to eat it

As yogurt by the spoonful.

As icing on muffins or a healthy cake (make sure to refrigerate).

use in smoothies.

Use it to top off fruit salad or parfaits.

3/4 cup vegan greek yogurt or yogurt of choice.

honey to taste.

Vanilla beans (or vanilla extract).

Stir or whip with a fork until light a d fluffy.

Veggie sandwich

Lettuce, carrots, celery, farmer cheese, mustard, and basil put between two slices of ciabatta bread and wrapped in a napkin! This easy and fresh sandwich is great for an afternoon snack!

Feel free to change this sandwich and fill it with whatever you want!

Make it Dairy free

If you want this sandwich to be vegan or dairy free leave out the farmer cheese.

Make it gluten free

Use gluten free bread, but if you use normal bread organic is the best.

I’ve gotten into the habit of eating my salads with a mixture if coconut aminos (or soy sauce), rice vinegar, and sesame seeds. These three ingredients taste magnificent together and adding in some scallions and ginger makes it even better!

Not just a salad dressing! This dressing can be a dip, marinade, sauce, or a complement to recipes!

Coconut aminos

If your not a fan of soy sauce or know that soy sauce is packed full of salt…then you’ll love coconut aminos! Coconut aminos are coconut palm tree sap that has it’s own natural salt flavor without the added salt of soy sauce!

I was trying to make a new dressing that I had never tried before and lime and sesame came to my mind! Sesame seeds, rice vinegar, and lime goes great together in this tangy dressing!

Parmesan asparagus (v)

This is the second time I’m using asparagus so far and both my recipes have turned out great! To me asparagus tastes very similar to green beans and tastes good in most green bean recipes as well. However made my first batch of asparagus with lemon, garlic, and butter. This recipe was better then my first one and why wouldn’t it be when you add parmesan cheese to it?!

this recipe uses 5 simple ingredients… asparagus, vegan Parmesan cheese, sea salt, olive oil, and black pepper.

If you dont have asparagus

Use green beans in place of asparagus if you dont have it on hand or dont like asparagus.

1 pack of fresh asparagus.

Vegan Parmesan cheese as desired.

Extra virgin olive oil for the pan.

Sea salt and black pepper to taste.

DIRECTIONS

In the olive oil in a pan saute the asparagus at medium high with the sea salt and black pepper.

When tender a slightly darker in color turn off the heat. Grate the parmesan cheese over top as desired.

Vegan salsa verde

Vegan salsa verde with tortilla chips

Unlike common salsa verde his recipe uses sweet peppers and avocado for a smoother more delicious flavor!

Switch ups

Use jalapeno instead of sweet peppers.

Leave out the avocado and use more tomotillos.

Add ins

red pepper flakes.

Extra cilantro.

add some spicy peppers for more heat!

Vegan salsa verde

Ingredients

Category: mexican

Makes: about 2 cups

4 plump ripe tomotillos.

1/2 cup white or yellow onion diced.

Cilantro as needed stem and all.

1 garlic clove.

Sea salt and black pepper to taste.

2 pinches or sugar.

Juice of 1 lime or lemon.

1 small sweet pepper.

1 pinch of ground cumin.

1 1/2 ripe avocados peeled and seeded.

DIRECTIONS

Roast the tomotillos in an oven on broil until slightly blackened on top.

Pulse through a food processor until slightly clumpy.

Top with cilantro flowers if desired. Serve with tortilla chips and/or carrot strips.
