A delicous way to start your day! Maybe it’s a quick snack or a midnight munch or even as a meal. However you eat this toast it will be enjoyable and full of that avocados delicious nutty and creamy flavor!

Celery leaves on toast my not be the first thing you think of, but I live the flavor of young tender celery leaves as the older leaves tend to be bitter.

Before I get to the recipe I’d like to say that what bread you use for your toast is vital. Cheap bread with bleached flour or enriched flour is not that good for you or the flavor of the toast. Use a good bread that either is healthy or from Italy, canada,or a country known for it’s good breads.

Gluten free option

Use a really good gluten free bread or you could serve it on carrots!

Ingredients

Serves: 1 per toast

1 healthy slice of bread.

Extra virgin olive oil.

Sea salt and black pepper to taste.

1/2 an avocado thinly sliced.

Parsley.

Chopped chives.

Young celery leaves.

Sesame seeds.

2 lime wedges to garnish (squeeze with lime juice to taste).

DIRECTIONS

Toast the slice of bread. Top with the avocado slices and parsley and celery leaves. Sprinkle with the salt, pepper, and sesame seeds. Drizzle with olive oil and lime juice. Serve and enjoy!

Cherry sheet pie

You’ve probably heard of sheet cake, but this is sheet “pie”. Black cherries baked into a warm pie! I love pies and I don’t eat cake very often so instead of sheet cake I made sheet “pie”!

serve with dairy or vegan ice cream if desired or enjoy it just by itself!

Vegan option

use homemade or store bought vegan pie crust. Here is my pie crust recipe, but instead of butter you could use coconut oil for a vegan option…The best pie crust

1 recipe for double pie crust ( store bought or homemade) The best pie crust.
the filling

frozen black cherries.

Squeeze of lemon or lime juice.

sugar to taste.
Directions

make or prep the pie crust and grease a baking sheet dish. Roll the Half pie crust dough onto a baking dish. Mix all the filling ingredients together in a large bowl. Pour into the baking dish. Using the remaining dough make strips and lay across the pie. Bake at 350•f for 40-50 mins.

Warm blueberry yogurt (v)

Creamy yogurt topped with warm wild blueberry sauce! This recipe uses only two ingredients!

I love the colors of the blueberry sauce mixed with the pure white yogurt. I used frozen blueberries, but fresh can be used as well.

Variations

Instead of using blueberries you can use other berries such as… blackberries, raspberries, Cabernet grapes, or strawberries. Use any berries or fruit you want!

Add ins

Add in some nuts for extra protein! I used walnuts and pecans, but cashews and/or any other nuts taste great as well!

Vegan yogurt of choice.

frozen or fresh wild blueberries.

pecans and walnuts if desired.

Directions

put the yogurt in a bowl, set aside. Heat the blueberries in a sauce pan at medium-high heat. When the blueberries start to deflate or there is a lot of juice in the pan turn off the heat. Pour over the yogurt. If desired too with pavan sand walnuts. Enjoy!

1 piece of toast, 6 different flavors! Toast is a quick breakfast meal that doesn’t require much prep. I love toast, but not always with butter and jelly so this is a remake of your normal everyday toast. Some of these toppings are vegan amd some have nuts.

Vegan option

use vegan and dairy free ingredients like yogurt. Greek yogurt is best for toast.

Gluten free option

Use gluten free bread for the toast and make sure the hummus and nut butters are gluten free too.

Apple, pecan, rosemary salad with spicy bbq dressing

I never knew that bbq sauce on a salad had such a great flavor! I love the flavor of bbq sauce, but I wanted a refreshing way to use it… so I put it on a salad!

This is a great salad for fall with apples and pecans and a kick of spicy bbq sauce.

if you don’t like bbq sauce on a salad then you can use any of the following dressings below instead…

Sweet rice vinegar dressing

bonefish grills house dressing

Herb dressing on farmer salad

The bbq sauce

I used Stubbs original bbq sauce, but you can use whatever bbq sauce you want.
Variations

try using darker greens such as kale, collards, or cabbage.
use a Dijon maple or honey dressing. Honey dijon dressing

Add ins

butternut squash.
for extra heat use extra spicy bbq sauce!

diced apple pieces (about 1/4 an apple).
crushed pecans.

Summer strawberry salad

A delicous mixer of ripe strawberries, fresh basil, and the delightful crunch of romaine lettuce.

This is one of my favorite salads because I love the sweetness of the strawberries and the fresh peppery flavor of the basil. As you can see this salad has many toppings which means many flavors just waiting to burst as you take a bite! As you eat you’ll taste summer in every bite no matter how the weather is!

Make sure the strawberries you choose are very ripe and deep red. If you can do get organic strawberries.

Purslane flowers

I used the wild flowers called purslane on this salad and they can be left out or found in the wild. Before picking make sure you look up a pic of what purslane looks like so you dont pick the wrong plant!

Super fresh and full of flavor! These rolls fill your cravings for fresh veggies and just the right amount of sweet mango goodness to treat that sweet tooth!

There were these rice paper rolls just laying in the cabinet waiting to be used. I of course knew I had to do something with them…so I made vegan veggie rice paper rolls! I’m not a vegan or anything, but I do like to eat vegetarian based foods and meals.

The veggies

Choose fresh veggies and cut them the day your going to use them ( cutting the veggies a day before could lead to less crunchy vegetables.

Change up

If you dont have any of the veggies in this recipe try using other vegetables.

For meat or seafood lovers

Add in cooked chicken, shrimp, or any other meat or seafood you like.

Serves: 1 per 3 rolls

3 rice paper roll wrappers.

Thinly sliced cucumber.

Thinly sliced carrot.

Lettuce.

Sliced avocado.

Mango slices (to serve).

DIRECTIONS

Wet the wrappers and fill with all the ingredients (except the mango).

Roll up and place on a plate.

The dips

2 tbsp coconut aminos.

1 tbsp rice vinegar.

Sesame seeds.

DIRECTIONS

Gently whisk.

1-2 tbsp smooth nut butter ( I used sunflower seed butter).

Crushed pistachios.

Place the dip on the side of the plate of rolls.

I love simple little fresh lettuce cups and these cups have a wonderful refreshing flavor thanks to the grapefruit and cucumber. I’ve added a slightly spicy chili dressing to drizzle over these lettuce cups and it’s really simple, but if your not a fan of chili powder then you dont have to use this dressing. Not only is this recipe delicous, but also vegan and gluten free!

If lettuce cups are not your thing and it takes to much time…then you can make it a normal tossed salad.

Nut free option

Leave out the crushed pistachios. Sesame seeds are also in this recipe and can also be left out.

Switch ups

You can change out the grapefruit ingredients for orange ingredients which will add a sweeter, more citrus flavor.

if you dont have bib lettuce then romaine or ice berg lettuce work fine.

Add ins

These are some ingredients that you can add in if you like, but they are all optional.

Tofu, or chicken.

I love quick noodle bowls with fresh ingredients and they must involve some olive oil ( extra virgin olive oil is best!) The black olives are optional or you can use green olives instead.

Making your own noodle bowl is quite easy! First start with noodles and add in other ingredients until you have the perfect combination! Try making a smoothie bowl if your trying to satisfy your sweet tooth!

if you dont have coconut aminos or rice vinegar, just use soy sauce and white vinegar in it’s place.
